Responsibilities
- Develop and execute seasonal menus aligned with culinary trends and guest preferences
- Oversee daily kitchen operations including inventory, cost control, and staff scheduling
- Train and mentor culinary team on techniques, safety protocols, and presentation standards
- Collaborate with F&B Director on concept development and menu engineering
- Ensure compliance with health regulations and maintain HACCP standards
- Manage vendor relationships and sourcing of sustainable local ingredients
- Lead banquet execution for 500+ guest events
Qualifications
- 5+ years progressive culinary experience in luxury hotel environments
- Formal culinary education from accredited institution
- Proven leadership skills with team management experience
- Expert knowledge of California cuisine and seasonal ingredients
- ServSafe certification and strong HACCP understanding
- Advanced proficiency in inventory control and cost management
